HAIKU RESTAURANT
HAIKU is a macro bio_vegan cuisine restaurant, located in the center of Palermo. The restaurant has been conceived as a place, where you can escape from the metropolitan chaos, inside which you can spend moments of relaxation, tasting refined dishes and discovering the flavors of a healthy and quality cuisine. The client asked us to create a room whose spaces clearly and coherently expressed an image in harmony with the culinary philosophy. The restaurant develops along a longitudinal axis that from the entrance, in sequence, passes through the two main rooms until you reach the toilets and the kitchen. The first area is a room also for aperitifs, more open to the public, characterized by the stereometric presence of a counter, in oak, slate and waxed iron, and by specially designed high tables and stools. The counter visually enters through a stone cladding, the same that rises from the floor, the passage to the second room, the true heart of the room. In a wall of the counter area there is a small loophole, in waxed iron, placed between brackets embedded in the wall, which allows a visual glimpse between the two rooms. The connection between the two rooms partially reveals the trace of an old arch, whose profile on one side was left uneven, while on the other, it was incorporated into the stone cladding of the counter. The second room, the result of a combination of two adjoining rooms, is partially covered by a vault "original" at the time; next to this a "L" wooden false ceiling has been realized. This solution was also dictated by the need to lodge between the overlying floor and the new wooden false ceiling, the air conditioning and ventilation units with heat recovery. Shutters camouflage pre-existing windows, designed with hinged frames and linen canvases, to allow the passage of light. In the second room there is a stone-clad monolith, which visually flickers at a man's height the joint that leads to the bathrooms and the kitchen. It is a visual and two-sided filter, which is perceived as pure volume from the room, while from the services hub it is a container. The colors of the materials follow the passage of natural light: from the first room, more airy and open, we move gradually to the second, less bright but at the same time more intimate and collected, up to the toilets defined as neutral and single-dyed elements. The constructive system of the room is brought to light, leaving the walls in calcarenite blocks visible, where it is considered coherent with the project intervention. These are combined with shaved and colored plasters with natural oxides, stone cladding and wood paneling, creating different environments and atmospheres. An overall vision, coherent and integral, has animated all the architectural solutions, the design of the furniture made to measure and made by local workers and, lastly, the graphics of the logo and the menus.
